We're willing to make a bet on Cava - it's due a renaissance. Unlike Prosecco, whose popularity finally seems to be plateauing, they really are focusing on quality rather than quantity now, after years in the doldrums. Of course, they brought the whole idea of cheaper alternatives to Champagne to the world, so they've had a few years of perfecting their techniques now. The Pujadas range is simply fantastic - great value, enjoyable and interesting bubbles.
