INFO: In the charming flower-decked village of Lantignie, Jacky Gaulthier and his family manage Domaine de Colette in an eco-aware manner and practice "Lutte Raisonnée".Jacky started out on his own at 17 when he took over his uncle's estate and bought some additional plots to offer a wider range of terroir specific wines.
The vineyards are cultivated using "Lutte Raisonnée" or minimal intervention as Jacky’s approach is very ecological. Only organic manure is used as well as grassing over and shallow ploughing. The soil is granitic and the bush trained vines average 40 years old. The harvest is all carried out by hand with yields never exceeding 45 hl per ha.
Selective sorting of the harvested grapes before vatting on a sorting table. The hand-picked grapes are vinified in whole bunches in respect of the Beaujolais tradition. After a 9 to 10 day vatting, the grapes are gently pressed (using a pneumatic press). The wine is then matured in vats until bottling, which is after Easter.
This light red wine has plentiful red fruit aromas, cherries and raspberries. Its is fleshy and soft with juicy fruit and a lively acidity. The supple tannins are ripe and light, the finish is silky and persistent. No oak treatment.
